Swanderful news as pub is island’s new Michelin Guide entry

THE Swan pub in St Peter Port is the only locally-based new entry in this year’s Michelin food guide.
New owner Christophe Gaultier was delighted to feature in the guide for Great Britain & Ireland.
He bought the pub with his partner, Briony Ferbrache, in December last year.
‘A lady came and ate in the pub last year and when she had finished she asked to have a word. That was when she said she was a Michelin inspector. I was shocked,’ said Mr Gaultier.
‘She was very pleased with everything and thought it was a beautiful traditional pub with an amazing atmosphere.’
There was a further secret inspection of the upstairs restaurant by the guide, but Mr Gaultier did not know when that had happened.
He said a customer had recommended the pub and that had prompted the visit.
